Its a pure blend of a lot of patience and some imagination to get things done in a right way.

Cooking to me was innovation in a tough way. I guess experiments with a lot of permutations and combinations is the best way to master it.


Sweets - Carrot Halwa


Carrot Halwa

Ingredients:

Carrots grated 2 cups
Milk 1 cup
Sugar 1/2 Cup
Grated nuts(Almond and Cashews)
Raisins
Ghee 3 Spoons
Saffron a few strands

Procedure:



  • Heat 2 TSP of ghee in a skillet and add in the grated carrots and saute them till they are 1/2 cooked.

  • To this mix add in the milk and keep stirring the mix till the Milk blends well with the carrots and the raw smell fades away and they are fully cooked. But be careful to check that they are not fully mashed or mushy.

  • Now add the sugar and mix till it they becomes dry.

  • Heat remaining spoon of ghee in a separate pan, fry the nuts and raisins and combine them with the Carrot mix.

  • Sprinkle the saffron and serve hot with icecream
