Its a pure blend of a lot of patience and some imagination to get things done in a right way.

Cooking to me was innovation in a tough way. I guess experiments with a lot of permutations and combinations is the best way to master it.


Gravy - Tofu capsicum Jalfrezi

Tofu capsicum Jalfrezi
Ingredients:

Fresh Tofu - 1 pack
Green bell peppers - 1
Ginger Garlic paste - 1 TSP
Onions finely chopped 1
Tomatoes Finely chopped 1
Milk - 1/2 cup
Yogurt - 2 TBSP
Cilantro

Dry Powders

Red Chilli powder - 1 TSP
Garam Masala powder - 1 TSP
Coriander Powder - 1 TSP
turmeric pOwder - 1 TSP

For seasoning

Cumins seeds - 1 TSP
Cloves - 1 TSP

Procedure

  • Remove the Tofu carefully from its pack and place it in a soft cotton towel to remove any moisture /water for 30 mins.
  • The slice it carefully into small cubes and fry them in oil till they turn golden brown. Keep them over a kitchen tissue to remove any excess oil.
  • Now heat oil in a wide skillet, add the seasonings, and when they crack add the Onions and saute well.
  • Then add tomatoes and when they turn tender add the capsicum and saute it well.
  • Add in all the dry powders, Milk, yogurt , salt and mix well till the capsicum is cooked and the broth thickens to a gravy consistency.
  • Slowly drop the fried tofus carefully and give them a quick stir. Allow them to mix with the gravy and switch off. Garnish with cilantro and serve hot with rice or Roti
