Vegetable Stew
This is a Kerala dish made of coconut milk cream and cooked vegetables which can be relished with cooked rice or Roti.
Ingredients:
Veges ( Carrot, Beans, Potato, Cauliflower and Green Peas)
Coconut Oil 2 TBSP
Coconut Milk 1 Cup
Onion 1 Chopped
Tomato 1 Chopped
Cloves 2-3
Cilantro for garnishing
Cumin Powder 1/2 TSP
Coriander Powder 1/2 TSP
Chilli powder 1/2 TSP
For tempering:
Mustard Seed 1 tsp
Curry leaves 1 sprig
Procedure
Cook the veges tenderly in a microwave for 5 mins adding a little salt.
Heat Coconut oil in a wide pan. Once oil is heated add the mustard seeds and clove and when it cracks add the curry leaves. Then add the onions and saute till the onions turn pink, ten add tomatoes.
Add the Cumin, Coriander and Chilli powder and saute for some time.
After 3 mins add the cooked veges and some water and saute till the mix is almost dry. Then add the coconut milk and let the broth thicken for some time.
Remove from fire, Sprinkle cilantro and serve hot.
